The batter of these apple cinnamon pancakes is mixed in a blender, contains and entire apple and tastes like apple pie. Not too sweet, they make a delicious breakfast. Serve alone or topped with more apples, syrup or a dollop of yogurt.

 

Apple Cinnamon Pancakes

Made in a blender, with an entire apple these pancakes are a delicious breakfast. The recipe is vegan, nut and dairy free.

Ingredients

  • 1 1/2 cup rice milk
  • 1 1/2 tsp olive oil
  • 1 tsp vanilla extract
  • 1 large apple pealed, cored and chopped
  • 1/2 cup whole-wheat flour
  • 1/2 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp Salt
  • 2 tbsp sugar
  • 1 tsp ground cinnamon

Instructions

  • Combine all the ingredients in a blender and blend until it becomes a batter like consistency.
  • Heat a lightly greased frying pan over a medium heat. Spoon batter into pan and cook each side on a low temperature until golden brown
  • Serve with apples, fruit, syrup or yogurt

Notes

You can swop out the rice milk for any other milk you like.
