Have you ever had a sudden craving for a slice of cake? Happiness in a mug cake by Kate Calder allows you to satisfy that craving in under 10 minutes. How? With 30 microwave cakes that are single serve and made in a mug in a microwave. It doesn’t get better or easier than this. 

There’s a recipe to suit every taste bud – from chocoholics (the double choc chip is divine), fruit fanatics (carrot cake anyone?)  and the novelty picks (red velvet and birthday cake). I was blown away by the pictures (do you know how hard it is to style a mug cake!) and delighted by how good they came out!

Dietary Notes


All recipes use an egg and in some cases have butter or dairy. It’s safe for vegetarians and if you are dairy free it’s easy to switch out the dairy for a dairy free alternative.

Those with a sweet tooth or who live alone and don’t want to make an entire cake. As the recipes are also super easy, it’s a great cookbook for beginner bakers.

I’m sharing the recipe for the peanut butter and jam mug cake, a classic combination I adore. 

Peanut Butter and Jam Mug Cake

This peanut butter and jam mug cake is a classic combination that comes together easily and quickly to satisfy any PB&J cravings.

  • Microwave


  • 1 tablespoon Sunflower oil
  • 3 tablespoons Soft light brown sugar
  • 1 Egg
  • Tablespoon Milk (use plant milk for a dairy free cake)
  • ½ Teaspoon Vanilla essence
  • 4 Tablespoons Self-raising flour
  • 1 Heaped tablespoon Peanut butter
  • Heaped tablespoon Jam (any jam of your choice)
  • Icing sugar To decorate


  • In your mug, mix together the oil, sugar, egg, milk and vanilla using a fork until smooth.
  • Add the flour and mix until just smooth.
  • Add the peanut butter and jam, and gently swirl it into the top half of the batter.
  • Microwave for 1 minute 10 seconds, or until risen and springy to the touch.
  • Dust with icing sugar and dig in.
