Senidlile Kodwa is an isiZulu phrase which means have you eaten yet? It’s the name of the third cookbook from Zanele van Zyl and the first question she asks anyone who enters her home. This cookbook is filled with 100 simple recipes that include breakfasts, veggies, mains, traditional Sunday lunches and of course desserts.

It’s a cookbook that is perfect for a beginner cook and suited to those with no strict dietary restrictions. I’m sharing her recipe for savoury rice, it’s a rice dish with minced beef, beans and veggies that is easy to make, budget friendly and is perfect for quick weekend dinners.

Savoury Rice

An easy dinner recipe made with basic ingredients. Perfect for busy weekday nights!

Equipment

  • Stove Top

Ingredients

  • 2 tablespoons oil
  • 1 small onion chopped
  • 1 red pepper pith removed, and chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon smoked paprika
  • 500 grams lean beef mince
  • 1 can black beans drained
  • 2 cups cooked rice
  • salt and pepper to taste

Instructions

  • Heat the oil in a pan over medium heat. Add the onion, red pepper, cumin, coriander and paprika, and fry for 2 minutes.
  • Add the mince, breaking it up with a fork, and cook until browned.
  • Using a fork, gently stir in the beans and rice, then season with salt and pepper, and serve.
